This is an initiative of Eth Ostau Comengés as part of the “Creative Europe Tramontana IV” project.
The documentary “Ací que la hèm levada”, directed by Mathieu Fauré on the theme of rural food, was screened at the village hall of Cérizols before an audience of 60 people. It presents a culinary know-how found only in a few villages of the Pyrenean foothills: the croustade levée, a traditional dessert made with sourdough that used to be served at patron saint festivals. Now supplanted by the puff-pastry croustade, it is a tradition kept alive by a few inhabitants and handed down within families. The restaurant Le Bistrot de Betchat now offers a revisited version of it.
